In order to cook well and be happy we only use fresh local produce from the province, and a few other places in Spain
With this in mind, we keep our á la carte quite small and we change it often in order to follow the season. Many times we are offered small batches of a special ingredient or produce, and that´s a big part of what makes cooking exciting.
